
Portuguese Chicken Tray Bake
A one-pan wonder for busy nights: toss chicken and veg on a tray, hit it with our Portuguese Chicken Mix, and roast till juicy with caramelised edges. Minimal prep, maximum flavour. Serve with lemony yoghurt and warm flatbreads—or swap in thighs, drumsticks, or tofu.
Serves 2
4 chicken thigh cutlets
2 tbsp Greek yoghurt
2 tsp + extra Spicetub Portuguese Chicken Mix
2 large potatoes, cut into cubes
½ red capsicum, sliced
½ green capsicum, sliced
1 small zucchini, sliced
½ red onion, cut into wedges
Dash olive oil
40g feta cubes
