Makes 8 serves
4 baby cos lettuce, chopped
2 mangos, cut into cubes
2 avocados, cut into cubes
1 cucumber, cut into cubes
1 punnet cherry tomatoes, halved
1⁄4 red onion, finely diced
Seeds from 1⁄2 pomegranate
2 tbsp slivered almonds
2 tbsp SPICETUB Salad Dressing Mix
2 tbsp olive oil
2 tbsp balsamic vinegar
METHOD
In a large serving bowl, add the SPICETUB Salad Dressing Mix, olive oil and balsamic vinegar and mix until well combined. Add lettuce, mangos, avocados, cucumber, tomatoes, and red onion. Toss to coat in dressing. Top with almonds and pomegranate seeds before serving.
