Charred Corn Burrito

INGREDIENTS
1 small tin corn (or frozen or off the cob)
SPICETUB Portuguese Chicken Mix
3 eggs
2 tbsp cottage cheese
1 tsp SPICETUB Portuguese Chicken Mix
1 wrap
Tasty cheese
Red onion
Coriander
Avocado slices
Spinach
METHOD
Heat a pan over medium heat and fry the corn until slightly charred. Add a generous sprinkle of SPICETUB Portuguese Chicken Mix and cook for another minute until lightly toasted and fragrant. Set aside.
In a bowl, whisk together the eggs, cottage cheese and SPICETUB Portuguese Chicken Mix. Pour into a pan and scramble gently. While still soft, place the wrap directly on top and press lightly so it sticks. Flip.
Add tasty cheese, the charred corn, red onion, coriander, avocado slices and spinach. Fold into a wrap, slice and enjoy.
