Zucchini Wrap

Not your average sandwich… but hear me out.
One zucchini, a bit of cheese and a good sprinkle of flavour turns into something crispy, golden and surprisingly satisfying. It’s one of those “why did this work so well?” kind of meals.
It starts simple - thin slices, layered up, baked until everything melts together and crisps around the edges. Then comes the good part. Flip it, load it up, fold it in half and suddenly you’ve got a sandwich moment going on.
Creamy, crunchy, fresh, a little cheesy… it just works.
Perfect for a quick lunch, something different, or when you’ve got random ingredients in the fridge and no real plan.
And once you try it… zucchini might just become your new go-to.

INGREDIENTS

1 zucchini, thinly sliced
Handful grated cheese
Generous sprinkle SPICETUB Veggie Master
Good smear cream cheese
Small handful rocket or spinach
1/2 cup shredded chicken
1/2 tomato
Extra sprinkle SPICETUB Veggie Master


METHOD

Preheat oven to 180°C and line a tray with baking paper. Lay the zucchini slices in a single layer, slightly overlapping. Top with grated cheese and a generous sprinkle of SPICETUB Veggie Master. Bake for around 25 minutes or until golden and crispy. Let cool slightly, then carefully flip.
Top with cream cheese, rocket, shredded chicken, tomato and another sprinkle of SPICETUB Veggie Master. Fold into a sandwich, slice if you like, and enjoy.
