Family Fave: Vegetarian Sausage Rolls

Family Fave: Vegetarian Sausage Rolls

Did anyone ask for a family & kids & toddler friendly recipe? We have got you covered and HOLY MOLY, these bad boys are not going to last long on that dinner plate. Let's try and put them in front of your husband, kid, wife or even trick yourself and tell them that these sausage rolls are made with meat and I kid you not - NOBODY will question it! They taste like the real deal, hands down! (If you actually do the whole trick thing, please film and share haha)
Ok, I strongly dislike when you just want to get to the recipe and the text is just blah blah... let's get to the recipe, shall we! (Just one more pic...)

Vegetarian Sausage Rolls

Makes 24 sausage rolls | Prep Time 15min | Total Time 30min

INGREDIENTS

Puff pastry, 3 sheets
1 onion, finely chopped
1 tbsp SPICETUB Veggie Master
80g walnuts
Handful of mushrooms
90g rolled oats
3 eggs
150g feta cheese, cut into cubes
1/2 tbsp soy sauce or tamari
50g breadcrumbs

Milk, to brush
Sesame seeds, for sprinkling (optional)

METHOD

Let the frozen puff pastry sheets thaw slightly and preheat your oven to 200C. Add the onion, SPICETUB Veggie Master, walnuts, mushrooms and oats into your food processor and blend until a paste like consistency forms. Now add in the eggs, feta cheese, soy sauce and breadcrumbs. Blend again until a smooth consistency forms.
Sprinkle a little bit of flour onto your kitchen bench and cut the puff pastry sheets in halves length ways. Place about 2 tbsp of the mixture onto the long edge of one pastry sheet half and roll. Cut into four equal portions and repeat with the remaining mixture and pastry sheets until all are used.
Place the sausage rolls onto a baking tray lined with baking paper. Brush the pastry with a little bit of milk and sprinkle with sesame seeds. Now bake for 20min at 200C. They should be crispy and golden. Enjoy with your favourite tomato sauce!
