Makes 6 serves
Preheat oven to 200C.
In a small bowl, mix the butter and SPICETUB Moroccan Chicken Mix. Pat the chicken dry and rub half of the spice butter under the skin and the other half over the chicken. Place the chicken breast-side up along with the pumpkin & red onion into a roasting pan, adding 1⁄2 cup of water. Drizzle honey over the pumpkin & red onion. Roast for 30 minutes, until the breast is starting to brown, rotate the chicken breast down and roast for a further 20 minutes. Rotate the chicken once again, cooking for a further 20 minutes until browned. Serve chicken and vegetables together.
