Potato Crust Quiche (No pastry needed)

I found this potato crust quiche idea on Instagram and immediately had to recreate it with a Spicetub twist.
Instead of pastry, the base is made from soft boiled potatoes pressed into a crust, which makes the quiche wholesome, satisfying and honestly such a clever alternative.
You can use any filling you like, but please try this one first - it’s so good.

INGREDIENTS

4 large potatoes, boiled & halved
6 eggs
3/4 cup milk
1/2 cup greek yoghurt
1 cup cheese, grated
1 spring onions
1 cup mushrooms, sliced
1/2 cup ham, thinly sliced
Handful of spinach
Generous sprinkle of SPICETUB Veggie Master

METHOD

While the potatoes are boiling, mix together all other ingredients in a bowl (reserve a sprinkle of cheese to top at the end). Press the halved soft potatoes into a tin (slightly oil beforehand), and push down to create the crust. I used a glass for this step. Then add the filling, topped with cheese, bake for 40-45min at 180C or until the egg filling is fully cooked. Let cool, cut into slices and enjoy!

• I first baked it with foil over the top, then removed the foil for the last 5min to brown the top.
