Makes 25 skewers
Short skewers
3 tbsp olive oil
3 tbsp SPICETUB Red Pesto Pasta Mix
2 tubs (440g) cherry bocconcini
2 punnets cherry tomatoes
Fresh basil leaves
Optional
Balsamic glaze
METHOD
Add the SPICETUB Red Pesto Pasta Mix to a small bowl along with 3 tbsp of water. Stir and let stand for 5 minutes to thicken up. Add the olive oil, stir to combine and add the bocconcini balls. Mix to coat all bocconcini, cover and let marinate for 2 hours or overnight in the fridge. Skewer one cherry tomato, one bocconcini ball, a folded basil leaf and another cherry tomato on each skewer.
Optional: Drizzle balsamic glaze dressing over the skewers before serving.
