Makes 7 serves
1 whole beef tenderloin, approx. 1.4kg
6 tbsp olive oil
1 1⁄2 tbsp SPICETUB Steak Master
METHOD
Prepare the beef tenderloin by removing the silver skin and trimming excess fat. In a small bowl, mix olive oil and SPICETUB Steak Master. Rub the spice mixture across the beef tenderloin on all sides. Cover and marinate in the fridge for 2 hours or overnight. When ready to cook, remove the beef from the fridge and let it return to room temperature.
Preheat barbeque.
Place the beef on direct heat on the barbeque and sear all sides, around 5 minutes per side. Once seared, move the beef tenderloin onto indirect heat on the barbeque and cook covered for 30 to 40 minutes. The centre of the beef tenderloin should measure 55C. Cook time will depend on tenderloin size & barbeque.
Let tenderloin rest 15 minutes before carving.
