Whole Baked Cauliflower by Katie-Rose Campbell

Okay, so we knew that cauliflower is an incredibly versatile ingredient HOWEVER this recipe takes it to the next level. This dish is not only FUN to cook but pretty and bloody DELICIOUS at the same time. This little flower of a cauli is here to impress!

Whole Baked Cauliflower

Serves 2 | Prep Time 20min | Total Time 1hr 5min

INGREDIENTS

1 medium cauliflower
3 tbsp SPICETUB Salad Dressing Mix
3 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
2 cups vine tomatoes
2 cups of vegetable stock + 1 cup of water
2 cups white quinoa
2 cups of rocket leaves
Handful of fresh parsley
1⁄2 cup slivered almonds, toasted

METHOD

Preheat an oven to 180 degrees Celsius. Bring a large pot of water to the boil and add the whole cauliflower to blanch. Remove cauliflower after 2-3 minutes and place on a lined baking tray.
In a small bowl, combine the SPICETUB Salad Dressing Mix with 2 tbsp of olive oil, lemon juice and cover cauliflower using a pastry brush (make sure to pour the dressing in between the cauliflower florets as well). Roast the cauliflower for 45 minutes, then add the vine tomatoes to the same tray drizzled with the remaining olive oil and place back in the oven for another 15 minutes. Whilst the cauliflower is roasting, boil the vegetable stock and water, then cook the quinoa as per packet instructions.
Once quinoa is cooked, place onto a large serving plate with the rocket and add the whole roasted cauliflower and vine tomatoes once cooked. Top with fresh, chopped parsley and toasted slivered almonds before serving.
