Walnut Crusted Chicken Tray Bake by Hayley Connor
What is not to absolutely love and obsess over when all you need is one tray to cook this full meal of goodness? A super special crust accompanied with juicy chicken and delicious veggies, what else do we need?
Serves 2 | Prep Time 5min | Total Time 25min
INGREDIENTS
1⁄4 cup panko breadcrumbs
2 tbsp walnuts, roughly chopped
1 tsp SPICETUB Steak Master
1 egg, whisked
1 large chicken breast
2 carrots
1 bunch broccolini
1 tbsp extra virgin olive oil
METHOD
Preheat your oven to 180 degrees Celsius and line a medium sized baking tray with baking paper. In a bowl, combine panko crumbs, walnuts and the SPICETUB Steak Master. In another bowl, whisk the egg.
Cut the chicken breast in half, through the middle to create 2 fillets with medium thickness. Dip the chicken into the whisked egg and place onto the baking tray, press walnut crumb onto the top of the chicken.
Cut the carrots in half and then lengthways in half again, then add carrots and broccolini to the tray with the chicken and drizzle with the olive oil. Bake in the oven for 20 minutes or until chicken is cooked through. Serve the chicken and vegetables and enjoy as is or with a side of your favourite dipping sauce.
