Now if this isn't that café dish that you have always wished to re-create at home! Super simple and the flavours are just spot on! Waffles of any kind are such a treat but when they come in sweet potato & smashed avo flavours, that's just another level of WOW!
Serves 2 | Prep Time 5min | Total Time 25min
For the waffle
1⁄2 cup oat flour
1⁄2 cup plain flour
1 tsp baking powder
1⁄2 tsp paprika
1 tbsp flax meal
Sprinkle of salt
3/4 cup sweet potato, mashed
1 cup almond milk
1 spring onion, thinly sliced
2 eggs (poached or fried)
1⁄2 tsp SPICETUB Avo Smash Mix, plus more to sprinkle
In a mixing bowl, combine the flours, baking powder, paprika, flax meal and salt. Then add in the mashed sweet potato, almond milk and spring onions, and combine.
Preheat your waffle iron and spray with oil. Once heated, spoon in half of your waffle batter, close and cook for 5-8 minutes (depending on your waffle iron). Waffle should be cooked through and crispy! Repeat with remaining batter.
While the waffles are cooking, mash the avocado in a small bowl and add 1⁄2 tsp of the SPICETUB Avo Smash Mix and mix through. Cook eggs your way.
To serve, place the waffles on two plates. Top each with half the smashed avocado, egg (poached or fried) and an extra sprinkle of your SPICETUB Avo Smash Mix. Enjoy!
