Salmon Nourish Bowl with Miso Dressing by Dani Mercieca
This bowl of goodness is the perfect combo of flavours, spices and crunchy & creamy elements! The dressing is actually one to save on its' own, too, for more than just this particular bowl of nourishing ingredients, so delish! We hope you enjoy this new go-to lunch bowl!

INGREDIENTS
2/3 cup brown rice, dry weight
1 1⁄2 tbsp extra virgin olive oil
2 cloves garlic, finely diced
2 cups kale leaves, chopped roughly
1 tbsp lemon juice
Sprinkle of salt
1 1⁄2 tbsp SPICETUB Asian Salmon Mix
2 x skinless salmon fillets (approx. 450g)
1⁄2 cup red cabbage, finely sliced
1⁄4 cup walnuts, roughly crushed
MISO DRESSING
2 tbsp rice wine vinegar
1 tbsp hatcho miso paste
1 tbsp tamari
2 tsp sesame oil
1 tsp caster sugar
METHOD
Rinse the brown rice until the water is clear. In a small saucepan add rice and 1 and 1⁄2 cups water and bring to the boil on medium to high heat. Once boiling, turn the heat to low to medium and cover with a lid. Cook for 30-35 minutes stirring occasionally, turn off heat and let stand for 5 minutes with the lid on.
Heat 1⁄2 tbsp of olive oil in a large fry pan on low heat. Add the garlic and cook until fragrant. Add the prepared kale, lemon juice and salt and sauté for 2 minutes, stirring occasionally. Set aside and keep warm.
Cover a layer of the SPICETUB Asian Salmon Mix onto a plate. Cut the salmon into bite size pieces, pat the salmon fillet pieces dry and roll in the spice mix to coat. Add the remaining olive oil to the fry pan on medium heat and cook the salmon pieces for about 3 minutes on each side or to your liking.
Combine the rice wine vinegar, miso paste, tamari, sesame oil and caster sugar in a small bowl until smooth. Serve salmon, rice, kale, red cabbage and walnuts in a bowl topped with the miso dressing. Enjoy!
