You may think, that you know how to make a good tomato sauce and you are probably right. But do you know how to make a finger-licking GREAT, unbelievably and unforgettably GREAT roasted vegetable tomato sauce? You are lucky today because this is exactly what you will find below. You are welcome!

Roast Vegetable Pasta

Serves 2 | Prep Time 5min | Total Time 50min

INGREDIENTS

1 red capsicum, roughly chopped
1 red onion, roughly chopped
4 tomatoes, roughly chopped
1 cup pumpkin, diced into 1cm cubes
1 tbsp SPICETUB Veggie Master
Extra virgin olive oil
1⁄4- 1/3 cup water
180g pasta of choice (penne or spirals are best), dry weight

To serve: nutritional yeast, toasted pine nuts

METHOD

Preheat your oven to 180degrees Celsius. Place your vegetables on a lined baking tray with the pumpkin cubes. Spread the vegetables out so that they are not over lapping. Spray or drizzle with olive oil and sprinkle over the SPICETUB Veggie Master. Toss vegetables to coat evenly. Place in the oven to roast for 35 minutes. Once cooked, remove from the oven and allow to cool for 10 minutes. Then place roasted vegetables into a blender with water (add more or less depending on how thick you want your sauce). Blend into a sauce – keep slightly chunky or blend until smooth, depending on preference. Set aside. Cook your pasta as per the packet instructions. Once pasta is cooked, divide into two serving bowls and spoon over the roast veggie sauce and mix through the pasta. Top with nutritional yeast and toasted pine nuts.

Note: store any left over sauce in an airtight jar in the fridge for up to 5 days.
