Raw Coconut Raspberry Slice by Erin Jones

Holy moly! Get ready for a raw slice you have not tasted before!! Think raw cherry ripe but with the deep flavours of raspberries. Finger licking good and hard not to eat all at once. And can we just stop and appreciate for a second how gorgeous they are in a photo? Again, super hard to do when you just want to eat them all! Enjoy, fam!

Raw Coconut Raspberry Slice

Makes 12 slices | Prep Time 20min | Total Time 40min

INGREDIENTS

Base

150g dried dates soaked in boiling water for min 1hr
150g almonds
2 1⁄2 tbsp cocoa powder
1 tsp vanilla essence
2 tbsp coconut oil
1⁄4 cup rolled oats

Raspberry Layer

2 cups frozen raspberries
2 cups desiccated coconut
3 tbsp maple syrup
2 tbsp canned coconut cream, solid layer
3 tbsp coconut oil, melted
1 tsp vanilla essence
1 tbsp SPICETUB Bliss Ball Mix

Chocolate Top

200g block cooking chocolate
1 tbsp coconut oil
2 tbsp coconut cream, solid layer

METHOD

Line a 20cm baking tin with baking paper and set aside. Drain the dates and place all base ingredients in a high-speed food processor. Blend until mixture is smooth (add more oats if necessary). Press the base evenly into the prepared tin ensuring it is even. Place in the freezer.
Add the raspberries to a saucepan, simmering they form a jam like texture. Take off the heat and add the remainder of the raspberry layer ingredients to the saucepan. Mix well and then firmly press this mixture onto the prepared base. Place back into the freezer.
Over a double boiler, melt the chocolate and coconut oil until smooth. Add the coconut cream and stir well. Pour this chocolate mixture over the middle raspberry layer and place back into freezer to set for at least 4 hours. Place in the fridge for 10 minutes to allow to soften before serving. With a sharp knife, gently cut into slices. Keep in the fridge for up to 5 days or freezer for up to 2 weeks.
