Mexican Taco Beef Bowl

Everyone loves Mexican food. I am yet to meet someone that turns down a good burrito, cheesy nacho bowl or this fingerlicking gooooood Mexican Beef Bowl! 
Fresh ingredients, some brown rice to fill you up and the most delicious Mexican Beef Bowl Mix from SPICETUB on your beef and you are done! Not only is it colourful and fresh but it makes me feel like I am having a meal that I would usually just get in a restaurant. Have to be stoked about that - Homecooking at its' finest, I'll say! Here we go:

Mexican Taco Beef Bowl

Mexican Taco Beef Bowl
Serves 2 (If you want to share)

INGREDIENTS

Beef mixture

3 tsp extra virgin olive oil
250g beef (any style: strips, shredded or mince)
1 carrot, grated
1 zucchini, grated
1 tbsp tomato paste
2 tsp SPICETUB Mexican Beef Bowl Mix

Topping suggestions

1/2 cup of corn, drained and slightly charred
1 cup of brown rice, cooked
1/2 cup of black beans, drained
6 cherry tomatoes, halved
1 cup of iceberg lettuce, shredded/thinly sliced
1/2 cup of shredded tasty cheese
1/2 avocado, mashed
1/2 lime
Small dollop of sour cream
Handful of corn chips
Small handful of pickled jalapeños

METHOD

In a large frypan, heat 2 tsp of the olive oil over medium-high heat. Once the oil is hot, add your beef until just browned. Make sure to break the beef up with a spoon while cooking. This should take about 4 minutes. Add the carrot and zucchini into your beef mixture and cook stirring until softened, about 3 minutes. Add the tomato paste and SPICETUB Mexican Beef Bowl Mix along with 1 tsp of olive oil. Stir to coat and cook until fragrant, 2 minutes.
Assemble your Mexican Beef Bowl by adding all chosen toppings into your bowl along with your beef mixture. Squeeze some lime over the top and sprinkle some extra SPICETUB Mexican Beef Bowl Mix if you wish. Enjoy!
