We love it when our customers & followers create their own dishes by using SPICETUB's spice mixes. Lovely Mandy has whipped up this banger of a vegan curry by using SPICETUB's Roasted Chickpea Mix.
We just scraped our own dinner bowls and are still licking our lips after re-creating this wholesome, wintery and hearty curry goodness.

Serves 4 | Prep Time 5min | Total Time 40min
1 tbsp extra virgin olive oil
1/2 pumpkin, cubed
2 cloves garlic, grated
1 small piece of ginger, grated
3 tsp of SPICETUB Roasted Chickpea Mix
4 small potatoes, cubed
4 carrots, chopped
1 can chickpeas, drained
2 cans coconut milk
1/2 cauliflower, chopped
Heat the olive oil in a saucepan and sauté the garlic, ginger and Moroccan Chicken Mix until fragrant. Add all other ingredients except for the cauliflower. Cook, stirring occasionally, until the vegetables are almost tender, this should take 17-20min. Add the cauliflower and cook for a further 5-7min until cauliflower is just softening. Enjoy!
Tip: Enjoy served on cous cous and fresh spinach.
