Creamy Avocado Pasta by Hayley Connor

Super creamy and zesty at the same time. This recipe literally takes 15 minutes!!! That's it! It's your favourite pasta and the creamiest avocado based sauce you have ever tasted. Give yourself a favour, try this quick AF pasta dish and let us know how much you love it!

Creamy Avocado Pasta

Serves 2 | Prep Time 5min | Total Time 15min


120g red lentil pasta or chickpea pasta, dry weight
1 garlic clove, crushed
1/4 cup fresh basil leaves + extra to serve
1 tbsp lemon juice + 1 tbsp lemon zest
1 tbsp extra virgin olive oil
1 medium ripe avocado
1 tbsp water
2 tsp SPICETUB Avo Smash Mix
6 cherry tomatoes, quartered


Cook the pasta following packet instructions, rinse and drain. While the pasta is cooking, add all ingredients except for the SPICETUB Avo Smash Mix to a blender or food processor and blend until smooth. If the mixture is a little too thick, just add an extra dash of olive oil. Once smooth, gently stir through 1 tsp of the SPICETUB Avo Smash Mix.
Add the cooked pasta back to the pot, add the avocado sauce and stir until combined. Serve your pasta topped with freshly grated lemon zest, fresh basil, the cherry tomatoes and a sprinkle of SPICETUB Avo Smash Mix.

*Because Avocados turn brown quickly after being cut, this dish is best served straight away. There's not likely to be any leftovers though!
