Asian-Spiced White Fish & Edamame Noodle Salad by Katie-Rose Campbell
This is such a delicious combo of flavours and super simple to prepare! Whether it is to quickly impress your friend whipping this banger up or just your mid week treat-yourself-meal, you will be coming back to this recipe again and again, trust us!

INGREDIENTS
1x 200g packet of soba or edamame noodles
1x 200g packet of edamame beans
5 tbsp extra virgin olive oil
1 bunch broccolini, roughly chopped
2 carrots, spiralised
3 tbsp SPICETUB Asian Greens Mix
4 tbsp tamari or soy sauce
1 lemon
2 white fish fillets
1 spring onion, thinly sliced
METHOD
Cook the noodles and the edamame beans as per packet instructions. Drain the noodles and edamame beans and add to a large serving bowl.
Heat 1 tbsp of olive oil in a frying pan and sauté the broccolini until charred, then add to the serving bowl along with the spiralised carrots.
In another bowl, combine the SPICETUB Asian Greens Mix with the tamari/soy sauce, juice of the lemon and 4 tbsp of olive oil. Pour half of that sauce mix into a small bowl and set aside as the dressing.
Place the fish fillets into the remaining coating mix and cover fully using a spoon. Pan fry the fish until golden and cooked, then set aside.
Combine the ingredients in the serving bowl and dress with the prepared dressing. Garnish with sliced spring onion. Serve the salad topped with the fish and enjoy.
