Veggie Tartlets

If you want a super fun and delicious way to use up left over veggies, this will be your new go-to! All you need is basically any left over veggies, some pesto or pizza sauce / tomato paste, a sheet of puff pastry and if you wish, a sprinkle of cheese to melt over the top. And of course to add all the flavour, we have used SPICETUB Egg Master and also the SPICETUB Steak Master in these!

Makes 6 individual tartlets | Prep Time 10min | Total Time 30min

INGREDIENTS

1 sheet puff pastry, lightly thawed
2 tbsp tomato paste or pizza sauce 
2 tbsp green pesto
2 cups left over veggies (cooked)
2 tbsp cheese (e.g. mozzarella or goats cheese)
1 egg, beaten to brush over pastry
1 tsp SPICETUB Egg Master or / and
METHOD

Once the sheet of puff pastry has thawed, lay it out in front of you on a baking sheet and preheat your oven to 200C. Gently cut the sheet into six squares, then score a small border around each individual square. This border will puff up to create the border. 
Spread the tomato paste on the middle of three squares and the green pesto on the remaining three squares as a base. Top with your leftover veggies, sprinkle your chosen SPICETUB mixes and sprinkle the cheese over the top. Brush the whisked egg over the crust border and bake in the oven for 20min or until the crust has formed a nice golden puff. Enjoy!
