Spiced Prawns with Garlic Rice & Veg

Ok, so this combo is definitely a bit unexpected. Not just for you, trust me. One of our beautiful friends Elise (@balancebyelise on Instagram) shared with us that our Roasted Chickpea Mix works well with prawns. Interesting... I thought.

A bit sceptical but very curiously, I went to buy the prawns and a few extra things that I thought would work well with this and... WOW! Elise, you are a legend and the whole combo of this dish just worked out so perfectly. Do yourself a favour and cook this banger, it will not disappoint!

Spiced Prawns w Garlic Rice & Veg

Serves 2 | Prep Time 15min | Total Time 30min

INGREDIENTS

For the rice
Extra virgin olive oil
20g butter, unsalted
1 clove of garlic, finely chopped
3/4 cup basmati rice, dry weight
1 1/4 cups water
1/4 tsp of SPICETUB Roasted Chickpea Mix

Veg & prawns
10 jumbo green king prawns
Extra virgin olive oil
1 red capsicum, cut into thin strips

1/2 broccoli, cut into small florets
1 carrot, cut into thin strips
Generous 2 pinches of SPICETUB Roasted Chickpea Mix

For the dressing
1 tbsp mayonnaise
1/2 tsp SPICETUB Roasted Chickpea Mix
Dash of water


METHOD

Starting with the rice, melt the butter with a dash of olive oil over medium heat. Add the garlic and cook until fragrant, about 1-2min. Add the water, basmati rice and SPICETUB Roasted Chickpea Mix, stir to combine and bring to the boil. Once boiling, reduce the heat to low and cover with a lid. Cook for 10min, then remove from the heat and keep covered for another 10min until the rice is cooked and the water has absorbed completely. (Don't peek!)
While the rice is cooking, prepare your prawns. To peel the prawns, pull off the legs, then peel the shell and leave the tail intact (if you like to prepare them like I did in the above photo). Then cut a small incision down the middle of the back with a sharp knife. Remove the vein and discard head (if desired). Wash with cold water and gently pat dry with a paper towel. Put aside.
Heat a dash of olive oil in a large saucepan over medium heat. Add the prepared capsicum, broccoli and carrot. Cook for about 5min for the veggies to still be quite al dente. Once cooked to your liking, add them to the prepared garlic rice, stirring to combine. 
While the veggies are cooking, combine the mayonnaise, SPICETUB Roasted Chickpea Mix and dash of water in a small bowl, stirring to combine into a smooth dressing.
Bring the large saucepan back to heat with a dash of olive oil and cook the prawns on medium heat for about 2min each side. While the prawns are cooking, sprinkle them with the SPICETUB Roasted Chickpea Mix. Once they have changed colour to a light orange and curled up slightly, take them off the heat. 
Serve the garlic rice with veggies in a bowl topped with the prawns and drizzle with your prepared dressing. Enjoy!
