Smoky Chipotle Chicken Enchiladas

Wooooowy, Mexican enchiladas, who could say no to that? For some reason, I never choose enchiladas when I am out for Mexican but I ALWAYS have food envy when seeing them on someone else's plate. Well, Emma from @emsswanston made it possibly for us to recreate deeeelicious enchiladas at home! No more food envy. Enjoy! 

Smoky Chicken Enchiladas
Makes 6-8 enchiladas | Prep time: 10min | Total time: 40min

INGREDIENTS

1 1/2 cups cooked chicken (or filling of choice), shredded
1 tbsp SPICETUB Mexican Beef Bowl Mix
6-8 corn tortillas

Life changing chipotle sauce

1 cup tomato puree
2 tbsp tomato paste
1 tbsp chipotle sauce
1 tsp each garlic & onion powder
1 tsp smoked paprika
1/2 tsp cumin
1 tsp arrowroot powder (opt to thicken)
Salt & Pepper
1 tbsp broth concentrate (from Gevityrx) (opt for gut health)


METHOD


Blend sauce. Add 3 tbsp to a baking dish. Mix 1/2 cup sauce & chicken (or filling of choice). Soften tortillas: Heat water in a pan until steaming (not boiling!). Dip one for 10-15 seconds. Place on a paper towel to remove excess water. Add filling and roll them up, place seam down. Add remaining sauce and bake at 175C for 15-20 minutes. Enjoy!

TIP: Served with lettuce, tomato, avocado, chilli, jalapeños and a drizzle of mayonnaise.
