Satay Chicken Skewers

The only reason why you wouldn't like satay sauce can only be if you are unfortunately allergic to peanuts. Otherwise, IT IS THE ABSOLUTE BEST!!! Save this recipe just for the sauce and feel free to pop on any of your favourite protein. In this recipe, I have decided to marinate some chicken and make them into skewers and IT WAS A HIT! So delicious, so creamy and saving some extra sauce for drizzling at the end is crucial! Enjoy lovers and as always, if you end up re-creating this banger, don't forget to share! :)

Makes 4 skewers | Prep Time 15min | Total Time 45min

INGREDIENTS

3 tbsp smooth peanut butter
1 tbsp SPICETUB Asian Salmon Mix
Squeeze fresh lemon juice
1 tsp honey
8 chicken tenderloins
Serve with salad of choice & rice

METHOD


To prepare the satay sauce, in a bowl combine the peanut butter and SPICETUB Asian Salmon Mix. Mix well to combine. Add the lemon juice and honey and then as much warm water as you require to reach your preferred consistency. I added about 1/3 cup. The water should be warm and you may have to whisk it a little before it goes smooth and is not clumpy anymore. Take about 2 tbsp of your satay sauce, place into a small bowl and set aside for drizzling later. 
To the original bowl of satay sauce, add the chicken tenderloins. Stir gently to coat completely, cover and let marinate in the fridge for at least 10min. 
In the meantime, get your BBQ ready and prepare your salad of choice and rice. 
Thread 2 chicken tenderloins onto one skewer to end up with 4 skewers in total. Cook on the BBQ until cooked through completely and lightly charred on both sides. Serve immediately and don't forget about your reserved satay sauce to drizzle on top! Enjoy!
