Makes 2 boats
INGREDIENTS
Spring onion, finely diced
1 bunch asparagus, trimmed
1 punnet cherry tomatoes, halved
Handful button mushrooms, sliced
2 pieces of salmon
1 tbsp olive oil
1 tbsp SPICETUB Asian Salmon Mix
1/2 tbsp honey

METHOD

Prepare your vegetables and cut each piece of salmon lengthwise, not quite to the bottom, and open to the outside folding it open. Heat the oven to 180C. Fold the baking sheets like an accordion tying the ends with twine, then opening the middle to shape the "boats". Layer spring onion, asparagus, tomatoes and mushrooms into the boat, topping them with a dash of olive oil and a generous sprinkle of SPICETUB's Asian Salmon Mix. Layer the salmon on top. To prepare the marinade, add olive oil, spice mix & honey, mix and lather on top of the salmon coating the fillet piece. Bake in the oven for 20 minutes or until cooked to your liking and enjoy! Serve as is or with a side of rice.
