Rice Paper Noodles

Serves 2 as side dish or appetiser
INGREDIENTS
2 tbsp soy sauce
1 tbsp rice wine vinegar
2 tsp sesame oil
2 tsp SPICETUB Asian Greens Mix
9 rice paper sheets
Olive oil
Spring onion

METHOD

Mix together the soy sauce, rice wine vinegar, sesame oil and spice mix for the sauce and set aside. Drizzle a cutting board with a generous glug of olive oil and spread it around so it coats the surface. Fill a large bowl or deep plate with water. Stack three sheets of rice paper at a time and soak in the water until softened. Drip dry and lay on the cutting board, generously brushing the top of the sheet with olive oil. Slice into thick noodle strips and carefully place in the bowl with the dressing. Repeat with the other two rice paper stacks. Gently mix and serve with thinly sliced spring onion. Enjoy!
