One-Pot Creamy Chicken in a Zesty Leek & Spinach Sauce

Creamy, zesty, and a little bit fancy—but made with chicken thighs and pantry staples you probably already have. This one-pan wonder is what happens when leeks meet spinach in a dreamy, citrus-spiked sauce, thanks to a sprinkle of SPICETUB Fish Master (yep, on chicken—stick with me). The name might suggest seafood-only, but this mix is all herbs and spice: think lemon, dill, mustard seeds, and parsley. It's fresh, herby, and totally versatile—basically the secret weapon your chicken didn’t know it needed. This dish is rich without being heavy, bright without being bossy, and made to be spooned over rice (or scooped straight from the pan—we won’t judge). If you’ve got 20 minutes and a craving for comfort with a citrusy twist, this one’s for you.

INGREDIENTS

Generous dash garlic infused olive oil (alternatively olive oil)
4 chicken thighs, skinless
1 leek, thinly sliced
3 big handfuls spinach, roughly chopped
150ml thickened cream (I used light but you can use full cream, too)
1 tbsp SPICETUB Fish Master
3/4 cup rice, uncooked

METHOD

Add the olive oil to a pan, once hot, add the chicken thighs and brown from both sides. Once browned, add the prepared leek and spinach to the pan. Brown the chicken further and cook until leek and spinach are soft and wilted. Meanwhile, add the rice and 1 1/4 of water to a pot, bring to the boil, cover and cook on low for 10min. Once the 10min are over, turn the heat off completely, but keep covered for another 10min.
Add the cream to the chicken, leek and spinach, stir and add the SPICETUB Fish Master. Gently combine, spooning the sauce over the chicken thighs continuously to keep moist and juicy. Cover and cook on low until chicken is cooked through. Serve chicken & sauce on rice and enjoy!
