Mushroom Omelette

Limited time, ingredients and patience usually calls for a quick and easy omelette in our household. Throw whichever veggies in there that you can still find hiding in the fridge and spice it up with the delicious SPICETUB Egg Master. And if you then also have some crunchy chickpeas around, use those as a topping. Scroll a tad to find the whole recipe. 

Mushroom Omelette

Serves 1


2 eggs
1 tbsp feta, crumbled
2 button mushrooms, sliced
1/2 carrot, grated
Dash of olive oil

Topping suggestions
1/8 avocado, sliced
2 cherry tomatoes, halved
1/4 cup roasted chickpeas

Whisk your eggs together. In a small bowl add all ingredients including the SPICETUB Egg Master, gently stir to combine.
Heat the olive oil in a small pan on low-medium heat. Pour the egg mixture into the pan and spread out flattening the mixture gently. Place a lid on the pan and let cook for about 3-4 minutes. There should be no runny egg remaining on the top surface of the mixture. Gently flip the egg omelette and cook for further 1-2 minutes. Place on a plate and top with your favourite toppings.

*Highly recommended: Crunchy chickpeas and avocado as this gives you the crunchy & creamy element. Enjoy!
