Mini Xmas Gingerbread Muffins

Cute, delicious and super easy to make! These little mini muffins take no time at all, it's a typical one-bowl recipe and they really do hit the spot when it comes to that Christmas gingerbread craving. The kitchen will smell of Christmas and they are just the cutest, quickest little snack to bring along to your family and Xmas get togethers. Enjoy! (And tbh, this really is a all-year-around winner!)

INGREDIENTS

1 1/4 cups self-raising flour
1/2 cup almond milk
1 egg
1 tsp bi carb soda
1 1/2 tsp ginger
2 tsp SPICETUB Porridge Master
1/3 cup coconut sugar
Packet white chocolate melts
Your favourite sprinkles


METHOD

Add all ingredients to a bowl and combine with a spoon. The dough is quite sticky. If needed, add another dash of almond milk. Spoon into prepared mini paper muffin cups on a mini muffin tray and bake for about 8min at 170C. While the muffins are baking, melt the chocolate over a double boiler. Dip the baked muffins into the chocolate and then into your favourite sprinkles to top them off. ENJOY!
