Mediterranean Fennel Pan

This one is definitely a bit out there and different to the usual easy peasy recipe but if you want to impress OR want to actually find your new go-to recipe that is simple and yet super delicious, this fennel pan is yours! If you either haven't tried fennel or didn't like it the first time around, do yourself a favour and try this version. I never liked fennel and now have it regularly in this dish. I like to serve this meal with some fresh ciabatta or olive sourdough to dip in and soak up all the delicious olive oil from the sun-dried tomatoes, olives and feta. Also, you will not guess the delicious spice mix we paired this stunner with, so good!!! Keep on reading to find out!

Fennel Pan

Serves 4 | Prep Time 10min | Total Time 40min

INGREDIENTS

4 fennel bulbs, thinly sliced
2 tbsp extra virgin olive oil
1/2 tbsp SPICETUB Steak Master, + more to sprinkle at the end
1/2 cup Kalamata olives, halved
1/2 cup sun-dried tomatoes, cut into strips
1/2 cup feta, cubed
Serve with ciabatta or olive sourdough

METHOD

Preheat your oven to 180C. Place your thinly sliced fennel bulbs into an oven proof dish and massage through the olive oil and Steak Master. Place in the oven to soften up for about 10min. Meanwhile prep your olives by halving them, cutting the sun-dried tomatoes into strips and cubing your feta cheese. 
Remove from the oven after the initial 10min, add the olives and tomatoes and give it a good stir through. Place back into the oven for another 10min. 
Removing one last time, adding the feta cheese. One last stir before going back into the oven for another 10min. The fennel should be nice and soft, with the feta cheese starting to soften and melt slightly. 
Serve with an extra sprinkle of SPICETUB Steak Master and some ciabatta or olive sourdough on the side and ENJOY!!! Now, that was easy AF, was it not?!
