Carrot Cake Muffins

I saw on Instagram that Hayley made these incredibly delicious looking carrot cake muffins. I think she made them into donuts! And I immediately thought "carrot cake muffins would be amazing with our Apple Crumble Mix", so within 5min I had gathered all ingredients and got baking and YES, our Apple Crumble Mix is absolutely perfect for this recipe! It's a quick recipe for super moist, fragrant and addictive carrot cake muffins: I hope you will enjoy! And thanks to Hayley for providing such a great recipe to start with! 

Carrot Cake Muffins
Carrot Cake Muffins

Makes 6 muffins (or donuts)


1 cup flour
1 tsp baking powder
1 1/2 tsp SPICETUB Apple Crumble Mix
1/2 cup carrots
1/2 banana
2 tbsp walnut oil (or olive oil)
1/4 cup honey
1 egg


1 tsp SPICETUB Apple Crumble Mix
1/4 cup vanilla yoghurt
Dash maple syrup


Preheat your oven to 180C. Mix all ingredients together and place into 6x muffin or donut tray moulds and bake for 20-25min. Meanwhile, mix all icing ingredients together. Let muffins cool completely, add the icing and enjoy!
