The perfect picnic snack to impress your friends & family or best snack to have for yourself when you feel peckish! With a healthy kick of chilli, these muffins are easily prepared and absolutely delicious when warmed up and paired with your favourite tomato relish or chutney.
Makes 12 muffins | Prep Time 10min | Total Time 35min
2 zucchinis, grated
1 cup flat-leaf parsley, chopped
1 cup spinach, chopped
1⁄2 cup chives, finely chopped
1 cup wholemeal self-raising flour
1 tsp SPICETUB Chilli Scrambled Egg Mix, plus extra to sprinkle Cracked black pepper
1 cup smooth ricotta
1 cup diced cooked bacon or ham (optional)
1/3 cup pumpkin seeds, roughly chopped
Preheat the oven to 200 degrees Celsius. Lightly grease a 12-well muffin tray and line with paper cases. Place the zucchini in a clean tea towel and squeeze out as much liquid as possible. Transfer to a large bowl and add the parsley, spinach, chives, eggs, flour, SPICETUB Chilli Scrambled Egg Mix, pepper and stir well to combine. Add the ricotta and bacon (if using), stir until just combined.
Divide the mixture between the muffin tin moulds. Top with the pumpkin seeds and an extra pinch of SPICETUB Chilli Scrambled Egg Mix. Bake for 25min or until cooked when tested with a skewer. Serve and enjoy!
*TIP: Serve with your favourite tomato relish and warmed up if not eating all straight away.
