Roast Veggie Pizza by Abbey Layton
Paaaaaacked with veggies and flavour. If you are someone that needs meat on their pizza, please try this banger and try telling us again that this veggie pizza doesn't tick ALLLL the boxes! Gorgeous looking food that tastes good AND is classified as a comfort food. YES!
Serves 2 | Prep Time 30min | Total Time 45min
INGREDIENTS
Base
Roast pumpkin, sweet potato, beetroot dip OR tomato paste
Toppings
1 potato, thinly sliced
1 small sweet potato, thinly sliced
2 tbsp extra virgin olive oil
1 tbsp SPICETUB Pizza Master
1 broccoli head, cut into small florets
1⁄2 punnet of cherry tomatoes, halved
Handful of mushrooms, roughly chopped
1⁄2 red onion, thinly sliced
2 wraps or pita flatbread of choice
Parmesan or pizza cheese
METHOD
Preheat your oven to 180 degrees Celsius. Thinly slice your potato and sweet potato, generously season with olive oil & SPICETUB Pizza Master and pop them in the oven for 25-30 minutes.
Whilst the potatoes are roasting, chop the broccoli, cherry tomatoes, mushrooms & onion.
Spread your preferred base onto your wrap or pita flatbread. Once your veggies are almost roasted and have been in the oven for 25-30 minutes, take them out and add them to your pizza base, along with all other veggies. Sprinkle some more SPICETUB Pizza Master over the top (optional). Leave your pizza in the oven for about 10 minutes until all veggies are almost cooked. Take your pizza out, sprinkle with cheese and pop it back into the oven for another 5 minutes or until the cheese has melted. Enjoy!
