Moroccan Spiced Cauliflower Bowl by Sarah MacDonald

Colour, flavour, creamy dressing (that you can use for soooo many other dishes, too!) and an aroma that fills the whole house! This wholesome bowl of fresh ingredients and golden cauliflower & chickpeas is simply fantastic. Enjoy and let us know how you like it!

Moroccan Spiced Cauliflower Bowl

Serves 2 | Prep Time 10min | Total Time 40min

INGREDIENTS

1 small head cauliflower, cut into small florets
3 tbsp SPICETUB Moroccan Chicken Mix
2 tbsp extra virgin olive oil
1 tin chickpeas, rinsed and drained
2 cups baby spinach
1 cup cherry tomatoes, halved

Dressing

1 tbsp runny tahini
3 tbsp Greek yoghurt (or plain plant-based yoghurt)
1 tbsp lemon juice
1/2 tbsp extra virgin olive oil
1 clove garlic, finely minced
1 tsp ground cumin
1 pinch sea salt

METHOD

Preheat the oven to 180 degrees Celsius. Add the cauliflower to a medium sized bowl with 2 tbsp SPICETUB Moroccan Chicken Mix and 1 tbsp olive oil. Toss to combine and spread out evenly over a large lined baking tray. Bake for approx. 30 minutes. While the cauliflower bakes, add the chickpeas and remaining olive oil and SPICETUB Moroccan Chicken Mix to the bowl and toss to combine. When the cauliflower has been in the oven for 15-20 minutes, add the chickpeas to the baking tray. Cook the chickpeas and cauliflower together for a further 10-15 minutes, or until both are golden.
Combine all dressing ingredients in a jar and shake to combine.
Divide the baby spinach between two bowls. Add the halved cherry tomatoes to the bowls.
Remove the cauliflower and chickpeas from the oven and divide evenly between the bowls.
Drizzle over the finished dressing and enjoy!
