Mediterranean flavours with the Kalamata olives, feta and cherry tomatoes, paired with the Moroccan-spiced chicken is just heaven! A delicious salad that is fresh, filling, nutritious and pretty as well. Enjoy this super quick and yum creation by Alex McNeill!
Serves 2 | Prep Time 5min | Total Time 20min
1 large chicken breast
2 tsp extra virgin olive oil
2 tsp SPICETUB Moroccan Chicken Mix
A small bag of mushrooms, roughly chopped
1 bunch spinach
8 cherry tomatoes, halved
12 Kalamata olives, pitted
20g feta cheese
Prepare by slicing the chicken breast in half, length-ways, to create two separate pieces. In a small bowl, combine 1 tsp of olive oil and the SPICETUB Moroccan Chicken Mix to create the marinade. Rub the marinade into the chicken breast and set aside.
Heat the remaining olive oil in a frypan on medium heat. Once the oil is hot, add the chicken and mushrooms and cook until the chicken is cooked through and slightly browned on the outside.
Place the spinach on a plate and place the chicken breast with the sautéed mushrooms on top. Scatter the cherry tomatoes, olives and feta over the chicken and sprinkle with more SPICETUB Moroccan Chicken Mix if you wish. Enjoy!
