WARNING: These little cauliflower bites are addictive! Soooooo so so bloody good. A serious kick of spice, the natural creaminess of the cauliflower and if you wish, serve with a creamy sauce on the side to calm the tingle and get ready for the next bite. Enjoy!
Serves 2 | Prep Time 8min | Total Time 33min
1⁄2 large cauliflower, cut into florets
3 tbsp extra virgin olive oil
2 tbsp SPICETUB Roasted Chickpea Mix
1⁄2 cup nutritional yeast (not ordinary yeast!)
Preheat the oven to 210 degrees Celsius and line a large baking tray (or 2 smaller trays *) with baking paper. In a large mixing bowl, add cauliflower florets and olive oil. Mix well to ensure cauliflower is coated with the oil. Add the SPICETUB Roasted Chickpea Mix and nutritional yeast and mix well.
Spread the cauliflower evenly on baking trays, topping it with any leftover yeast/spice mixture. Bake in the oven for 25 minutes or until golden brown and crispy. Serve hot and enjoy as a nutritious snack or as a side.
TIP: Enjoy dipped in Greek yoghurt, a ranch or cheese sauce.
*The cauliflower needs room to breathe while roasting in the oven to reach its maximum crispy-ness, so spreading it across 2 baking trays is recommended where possible!
